Bulk Banana Juice Concentrate

Bulk Banana Juice Concentrate provides concentrated ripe-banana aroma, natural sweetness and soluble fruit solids in a pumpable liquid format. Clarified high-solids concentrate is used in beverages, dairy products, bakery, confectionery, fruit snacks, syrups and flavor systems where manufacturers require banana character with less pulp and viscosity than banana puree concentrate.

Fruit & ingredient profile

Sweet tropical fruit with distinctive ripe-banana aroma

Bananas are fruits of Musa species and hybrids in the Musaceae family. Commercial food processing commonly uses Cavendish-type dessert bananas selected at controlled ripeness for sweetness, aroma, color and processing consistency.

Banana is a climacteric fruit: during ripening, starch is converted into sugars while characteristic aromatic compounds develop and the pulp becomes softer. Ripeness at processing therefore has a strong influence on sweetness, flavor intensity and final concentrate quality.

Clarified banana juice concentrate differs substantially from banana puree concentrate. Juice production may include peeling, mashing, enzymatic treatment, clarification and filtration before concentration, producing a fluid amber concentrate with far less insoluble pulp than creamy, opaque banana puree.

Format distinction: clarified banana juice concentrate is best suited where high soluble solids, strong banana flavor and easier liquid handling are priorities. Banana puree or puree concentrate is generally preferred where substantial fruit body, creamy texture and visible pulp character are required.
Technical & commercial specifications

Key parameters for industrial qualification

Clarified banana concentrate can reach substantially higher soluble solids than banana puree concentrate. Commercial qualification should consider Brix, acidity, pH, clarity, flavor, color, microbiology and frozen-storage behavior together.

Soluble solids

Commercial example: 71 ±2° Brix

A current clarified banana juice concentrate specification uses 71 ±2° direct Brix and approximately 71.45 ±2.25° acid-corrected Brix. Alternative concentration programs may also be available.

Single-strength reference

About 22° Brix

One commercial clarified program identifies 22° Brix as single strength and recommends approximately 1 part 71° Brix concentrate to 3 parts water for reconstitution.

pH & acidity

Example pH 4.0–4.6

A current 71° Brix supplier specification reports acidity of approximately 2.25 ±1.25% as citric acid. Exact values depend on fruit source, processing and the commercial grade offered.

Appearance & clarity

Clarified amber liquid

Clarified concentrate is substantially lower in pulp and turbidity than banana puree concentrate. Color may range from golden to amber depending on raw fruit, process and thermal history.

Sensory

Full ripe-banana flavor

Approved material should show characteristic sweet banana aroma and flavor without fermented, scorched, excessively cooked, caramelized or otherwise objectionable notes.

Microbiology

Commercial release criteria

Supplier specifications typically establish total-count, yeast and mold limits together with applicable pathogen, residue, certification and customer-specific quality requirements.

Specification guidance: 71 ±2° Brix, pH 4.0–4.6, approximately 2.25 ±1.25% acidity as citric acid and 22° Brix single strength are representative values from a current clarified commercial program, not universal PFVN specifications. Confirm concentration, clarity, acidity, microbiology, storage and shelf life for the exact product offered.
Industrial applications

Major uses for banana juice concentrate

Banana concentrate is useful where manufacturers require recognizable tropical fruit flavor and concentrated soluble solids without the heavy pulp and viscosity associated with banana puree.

Beverages

Juice blends, smoothies & functional drinks

Used in tropical juice blends, smoothies, nutrition beverages and functional drinks, commonly paired with strawberry, mango, pineapple, apple, berry and other fruits.

Dairy & frozen desserts

Yogurt, milk drinks & ice cream

Suitable for flavored milk, yogurt preparations, cultured products, ice cream and frozen desserts where recognizable banana flavor is required with controlled fruit solids.

Bakery

Fillings, cakes & dessert systems

Used in bakery fillings, cake systems, dessert sauces, creams and glazes where concentrated banana flavor is required without adding the full body of puree.

Confectionery

Gummies, chews & candy centers

Provides sweet tropical fruit character to gummies, chews, jellies, hard candies and confectionery centers, either alone or in mixed-fruit formulations.

Fruit snacks

Bars, snacks & fruit preparations

Used in fruit bars, snack systems, fruit preparations and related products where banana contributes sweetness, recognizable flavor and soluble fruit solids.

Flavor systems

Syrups, compounds & beverage bases

Suitable for syrups, fruit compounds, beverage bases and flavor systems where standardized banana intensity and high-solids liquid handling are advantageous.

Packaging & handling

Banana juice concentrate packaging

Select package size according to concentration, annual volume, storage condition, production batch size, thawing needs and plant pumping or unloading capabilities.

Pilot / smaller production

5-gallon pails

Useful for trials and smaller production programs; commercial clarified 71° Brix banana concentrate is available in polyethylene pails.

Commercial drum

52–55 gallon / roughly 200–265 kg drums

Common frozen or lined drum scale for concentrated fruit ingredients. Exact fill weight varies with concentrate density and supplier configuration.

Tote / IBC

About 275 gallons / around 1,000 L

Useful for higher-throughput programs where product stability, annual demand and supplier filling capability support tote or IBC handling.

High-volume bulk

Tanker or bulk liquid shipment

May be available for selected high-volume programs where sanitary transport, product stability and suitable unloading infrastructure permit.

Storage & availability: frozen storage around 0°F / -18°C is common for high-solids clarified banana concentrate. High-Brix material may crystallize during refrigerated or frozen storage; controlled warming with agitation can return crystals to solution before use. Confirm net weight, liner, storage condition, shelf life, minimum order quantity and lead time for the exact program.
