About passion fruit and passion fruit puree
Passion fruit, principally associated with Passiflora edulis, is a tropical fruit known for its fragrant pulp, pronounced acidity and complex aroma. Commercial production commonly includes purple- and yellow-fruited types, with differences in color, acidity, aroma intensity, juice yield and sensory character depending on variety, climate, maturity and origin.
The edible interior contains aromatic juice and pulp surrounding numerous dark seeds. For industrial puree production, the fruit is opened and the pulp is separated from the rind before being refined according to the required finish. Depending on the product specification, seeds may be substantially removed or a controlled amount may be retained for visual or textural effect.
Passion fruit has a much more concentrated sensory impact than mild fruits such as pear or apple. Its combination of tropical aroma, sharp acidity and natural fruit character makes the puree especially useful both as a primary flavor and as a high-impact component in mango, guava, pineapple, peach, citrus, berry and other tropical fruit blends.
