Bulk Dark Sweet Cherry Juice Concentrate is produced from ripe sweet cherries (Prunus avium) and provides concentrated cherry flavor, natural fruit sugars, mild acidity and deep red-purple color. It is used in beverages, cider and fermentation, dairy preparations, frozen desserts, bakery fillings, confectionery, fruit snacks and industrial fruit systems.

Dark sweet cherries are cultivars of Prunus avium, a stone fruit in the Rosaceae family. Commercial varieties include Bing, Lapins, Sweetheart and other dark-fleshed sweet cherries selected for color, soluble solids and characteristic sweet cherry flavor.
Compared with tart or sour cherry (Prunus cerasus), dark sweet cherry is generally sweeter, less sharply acidic and rounder in flavor. This makes it useful in formulations where manufacturers want rich cherry character without the pronounced sourness associated with tart-cherry concentrate.
Industrial concentrate is typically produced by crushing and pressing ripe fruit, depectinizing or clarifying the juice, filtering and removing water under vacuum. Processing conditions influence color, aroma retention, clarity and the balance between fresh-fruit and cooked notes.
68° Brix is a common commercial dark sweet cherry concentrate grade. Acidity, color and clarity vary by crop and processor, so final approval should be based on the current supplier specification and representative sample.

FDA uses 20.0° Brix as the minimum single-strength reference for dark sweet cherry juice. Commercial 68° Brix products are commonly reconstituted at about 1 part concentrate to 3.2 parts water.
Dark sweet cherry is less acidic than sour cherry. Titratable acidity is supplier-specific and may be reported on a malic- or citric-acid basis, so compare values using the same analytical basis.
Commercial clarified concentrate can be specified for color absorbance, color ratio, turbidity and insoluble solids where visual consistency is important.
