Commercial ingredient sourcing depends on both technical suitability and supply requirements. A request containing only an ingredient name may not provide enough information to determine which product, source, packaging or supply program is appropriate.

Technical specification examples

Useful parameters depend on the ingredient format.

You do not need to provide every possible specification value, but including the parameters that are critical to your formulation or purchasing standard can significantly improve the quality of the sourcing request. Exact values should be based on your requirements rather than assumed from generic product data.

Juice Concentrates

Common considerations may include °Brix, acidity, pH, clear or cloudy appearance, color, pulp content, flavor profile and processing format. For certain programs, origin or juice type may also be important.

NFC Juices

Buyers may specify natural soluble solids, acidity, pH, pulp level, clarification status, pasteurization requirements and sensory profile. Package and required storage conditions should also be identified.

Fruit & Vegetable Purees

Useful parameters can include °Brix, pH, titratable acidity, viscosity, particle size, screen or finish, color and aseptic or frozen processing format.

IQF Frozen Products

Relevant details may include whole, sliced, diced or other cut format, target dimensions, grade, defect tolerance, variety, calibration and required frozen storage conditions.

Fruit & Vegetable Powders

Powder requests may specify moisture, particle size or mesh, carrier system where applicable, bulk density, color, solubility or dispersibility, processing method and packaging.

Specialty Ingredients

Citrus oils, cells and pastes can require format-specific parameters such as specific gravity, refractive index, optical rotation, pulp or cell profile, °Brix, viscosity or volatile composition.

Commercial requirements

Quantity and packaging are part of the specification.

Ingredient suitability is only one part of a commercial quotation. Minimum quantities, package configuration, palletization, storage requirements and freight can materially affect supply feasibility.

Fruit and vegetable ingredients are agricultural and processed products. Technical properties may vary by raw material variety, origin, crop, maturity, processing method, manufacturer and individual supply program.

PFVN therefore recommends evaluating the current specification for the actual product being quoted rather than assuming that a generic value applies to every source of the same ingredient.

If a parameter is critical to your manufacturing process, include the required range or limit in your inquiry. This may include °Brix, acidity, pH, viscosity, cut size, particle size, microbiological limits, moisture, certification, origin or another customer-defined requirement.
