Juice-sac recovery and quality control
Blood orange cells originate from the juice vesicles contained within the fruit's internal segments. During processing, the desirable pulp fraction must be separated from peel, coarse segment membranes, seeds and excessive albedo that could negatively affect appearance, bitterness or mouthfeel.
Processing may involve extraction, screening, separation, washing, size classification and stabilization before packaging. The exact process influences cell integrity, pulp-to-liquid ratio and the amount of naturally occurring fruit juice surrounding the cells.
Mechanical damage during extraction or downstream processing can break intact cells into smaller pulp particles. For premium beverages where clearly recognizable sacs are important, cell integrity should therefore be included in both supplier qualification and plant trials.
