Bulk Cranberry Juice Concentrate is produced from American cranberries (Vaccinium macrocarpon) and delivers concentrated tart fruit flavor, high natural acidity, soluble solids and deep cranberry-red color. It is used in juices, functional beverages, carbonated drinks, fermentation, dairy preparations, bakery, confectionery, fruit snacks and industrial fruit systems.
American cranberry (Vaccinium macrocarpon) belongs to the Ericaceae family and grows on low, trailing evergreen vines. The fruit develops from pale green to deep red as it matures and is commercially cultivated primarily for juice, concentrate, dried fruit, sauces and other processed applications.
Cranberries are naturally much more acidic and astringent than many common berries. Their strong tart profile makes straight cranberry juice intense at full strength, but it also allows cranberry character to remain identifiable when blended with sweeter juices such as apple, grape, pear or tropical fruits.
For concentrate production, mature cranberries are typically crushed and pressed, followed by depectinization, filtration and concentration under reduced pressure. Commercial clarified concentrate has low insoluble solids while retaining the characteristic red color and pronounced cranberry flavor.
50° Brix is a widely traded cranberry concentrate grade, while higher-solids products such as 65° Brix are also commercially available. Because cranberry is naturally high in acid, Brix, acidity and pH should be evaluated together when comparing programs.

FDA uses 7.5° Brix as the minimum single-strength cranberry reference. Commercial 50° Brix concentrates are typically reconstituted with roughly six to seven parts water per part concentrate, depending on density and calculation basis.
Commercial 50° Brix examples commonly show pH around 1.7–3.2 and roughly 10–20% titratable acidity as citric acid. Actual acidity varies by crop, origin and concentration.
Commercial clarified specifications commonly control turbidity at reconstituted strength, with supplier examples below approximately 10–25 NTU at 7.5° Brix.
Approved concentrate should retain characteristic red color and clean cranberry flavor without fermented, metallic, scorched, caramelized or other objectionable notes.
