Juice-sac recovery and pulp preparation
Mandarin orange cells originate from the juice vesicles contained inside the fruit segments. Industrial recovery aims to separate these desirable sacs from peel, albedo, coarse segment membranes, seeds and other material while preserving the required level of intact cell structure.
Processing may include extraction, pulp separation, screening, washing, size classification and stabilization before packing. The exact process influences the proportion of intact cells, smaller pulp particles, surrounding juice and overall sensory profile.
Mandarin peel is highly aromatic and contains citrus oils that can reinforce fruit identity at controlled levels. Excessive peel or membrane material, however, can introduce bitterness and an overly harsh flavor, making separation quality important in premium beverage applications.
