About pumpkin and pumpkin puree
Pumpkins belong to the genus Cucurbita, with commercial processing varieties commonly selected from species such as Cucurbita pepo, Cucurbita maxima and Cucurbita moschata. Processing suitability depends on flesh yield, color, natural solids, flavor, fiber level and consistency rather than appearance alone.
Industrial pumpkin varieties generally have dense yellow-orange to deep orange flesh, a mild earthy-sweet flavor and a soft texture after cooking. Variety and maturity can significantly influence dry matter, water content, sweetness, color and final puree viscosity.
For puree production, pumpkins are typically washed, opened or mechanically prepared, deseeded and separated from rind material before cooking and pulping. The cooked flesh is refined or homogenized to produce a uniform puree suitable for pumping, blending and controlled dosing into industrial formulations.
