Color, blanching and texture considerations
Spinach's green appearance is primarily associated with chlorophyll pigments. Heat exposure, acidic conditions, oxygen and storage can shift the appearance from fresh green toward duller olive tones, making process conditions important for manufacturers where green color is a key product attribute.
Blanching or another controlled heat step may be used to soften leaf tissue and reduce enzyme activity before pureeing or freezing. However, processing intensity also affects texture, flavor and color, so samples from different producers should be evaluated under comparable finished-product conditions.
Spinach puree can contain significant fine plant fiber. Pump design, line diameter, screens, homogenizers and filling equipment should therefore be compatible with the supplied consistency. Beverage and baby-food applications normally require tighter particle-size control than soups, pasta fillings or prepared meals.
