About guava and guava puree
Guava (Psidium guajava) is a tropical fruit known for its strong floral-fruity aroma, soft pulp and numerous small hard seeds. Commercial varieties differ in size, sweetness, acidity, aroma and flesh color, with pink and white guava being the principal types encountered in industrial fruit processing.
Pink guava typically provides a salmon-pink to deeper pink fruit color and a rich tropical profile, while white guava generally offers pale cream-colored flesh and a somewhat lighter visual profile. The actual flavor and color depend on variety, ripeness, origin and processing conditions.
For puree production, mature fruit is typically washed, sorted, pulped and refined to remove most seeds and coarse material. Because guava seeds are hard and can be noticeable in finished products, the finishing screen and residual seed specification are particularly important when selecting puree for beverages, baby food and smooth dairy applications.
