About pineapple and pineapple puree
Pineapple (Ananas comosus) is a tropical fruit valued for its distinctive aroma, yellow-gold flesh and characteristic balance of sweetness and acidity. Commercial fruit quality varies with cultivar, maturity, growing region and harvest conditions, all of which can influence soluble solids, acidity, color, aroma and processing yield.
Major commercial pineapple programs often favor varieties selected for sweetness, uniform color, low fiber perception and processing performance. The edible flesh contains juice together with fine insoluble fruit solids, allowing puree to provide more body and mouthfeel than clarified pineapple juice.
Pineapple puree is generally produced from sound fruit that is washed, trimmed, peeled or otherwise prepared, reduced to pulp and refined to the required finish. Depending on the supply program, the puree may then be deaerated, thermally processed and packed aseptically, or packed for frozen distribution.
